I like to think of it as the healthier sister of Eggs Florentine, a breakfast classic!
Breakfast is ma fave meal of the day (intentional typo btw!) I like to have something that fills me up and keeps on powering on until lunch so I like to stick to yummy, wholesome food to gimme that kick start.
Luckily, this recipe is both tasty and healthy so its a major win win in the scouse house! It’s also incredibly easy to make and takes under ten mins!
Asparagus and Scrambled Eggs on Spinach and Toast
- A slice of wholemeal toast
- A handful of spinach
- Two eggs
- Asparagus Tips
- Pepper (for flavour)
I simply put the asparagus tips in a pan of boiling water to get em tender and whilst I’m waiting I pop a slice of wholemeal toast in the toast and crack an egg in a cup before microwaving for a minute or two. once the egg is completely cooked I grab a fork and scramble like crazy until the toast pops out. I grab a handful of spinach from the fridge, layer it on the slice of toast and then cover that with the scrambled egg. To finish I drain the pan of boiling water and place the now tender asparagus tips on top. to flavour I sprinkle over some pepper.
