Healthy Work Lunch!

So we’re sat at our desk, it’s got to one o’clock and your belly starts rumbling. We head to the nearest Tesco’s and grab a £3 meal deal, it’s cheap and easy (but it’s not doing your healthy eating or your waistline any favours).

Has anyone else had this problem or is it just me?!

After moaning about my calorific cheese and onion sandwich too many times I decided I would kick my butt into gear and start taking in my own healthier lunches. It means me getting up about ten minutes earlier in the morning but it’s so worth it!

I usually take in a plastic container of mixed vegetable cous cous, Pitta chips and salad. For me, its the perfect mix of healthy carbs and the good ole’ green stuff and leaves me feeling full and nourished.

To make the pitta chips, I usually just buy a packet of wholemeal pitta breads (either from Asda, Tesco or Lidl). I take one pitta bread and slice it into strip before placing it onto a baking tray. Then I pour a tablespoon of olive oil over and season with sea salt and black pepper to flavour. Leave them in the oven for about 5-7 mins at gas mark 6.

I tend to buy a huge packet of mixed veg cous cous and it lasts me throughout the week. Usually, I’ll put about two to three tables of cous cous in my plastic container and throw in some salad next to it.  

 The end result is a colourful, healthy and cheap lunch box which is perfect for anyone trying to stay healthy at work!
