Mexican Pasta Bake!

 So I thought I’d bless you guys with the beauty that is Mexican Pasta Bake! In my opinion, this is the sexiest pasta bake I’ve ever had (and I’m a vegetarian).

I first stumbled across this tasty treat when I was a poor student. I didn’t exactly know what I was in the mood to eat. It was a few days before we were all due to move out and alls I literally had left to use in my cupboard was pasta, tins of black beans and sweet corn and a bag of Dorito’s. That’s when I came up with the genius idea of using them all up together in a pasta bake. I went into the garage over the road, bought some cheap pasta sauce and begged my housemate to lend me some cheese and that’s how Mexican Pasta Bake was born!

Please not the one I explain how to make in the blog is more suitable for two people or in my case, four. This time around I also put in peppers, onions a garlic just to add more for more people. However you can make this for just one like I did when I first created Mexican Pasta Bake in uni so so long ago…

 To make you’ll need:-

  • 1 to 1/2 bags of Pasta (I used a mixture of fusilli and conchiglie, if you want it healthier wholemeal pasta is the babe)
  • Any pasta bake sauce you like (I used a cheesy tomato one)
  • 2 Tbsp of Olive Oil
  • 1 tin of black beans
  • I tin of sweetcorn
  • 1 onion
  • 1 glove of garlic
  • 1 Red Pepper
  • 1 Green Pepper
  • Grated cheese (Completely up to you how much you use)
  • 1 bag of Nachos or Dorito’s (I used Dorito’s Chilli Heatwave)

Before you get down to the cooking, turn your oven on at 180 degrees.

To begin place your pasta in a large pan and pour over enough boiling water to cover all the pasta. I added a pinch of salt just for some extra flavour to the pasta. Leave to boil.

Then chop your onion (prepare for the tears!) and mince your garlic glove. Leave to the side and then chop your two peppers just so they’re ready for frying! Now is also the time I would drain my tins of black beans and sweetcorn, only because I get really stressed if I try to do it when I’m also frying my veg!

In a frying pan, drop your two tablespoons of Olive Oil and leave until it starts to sizzle. Then add in your garlic, your onions and finally your peppers. Leave to fry for about five minutes and then add your sweetcorn and black beans. Stir everything whilst it gently fries.

I don’y actually have a picture with the Black beans and sweetcorn in the fried mixture as at this point I was seriously stressed and shouting to my boyfriend to come and help me because I thought I was gonna burn the kitchen down…again.

Once fried, leave at the side (remembering to turn the hob off!) Grab your pasta bake tray (if you have no idea what I’m on about, there’s a picture below) and just put a dollop or two of the pasta bake sauce at the bottom. Don’t worry about the sauce being cold, it will be piping hot by the time it comes out of the oven.

After draining your boiled pasta, put some of it on top of the sauce already in the tray. Now you don ‘t actually have to do this step I just do it so it binds all of the bake together kinda like a cake!

If you like you can skip the previous step and just go straight into putting the fried ingredients in. After this I put the rest of the pasta over and then smoother it all in the remaining sauce.

Then grab your grated cheese and sprinkle a generous amount over the pasta. Be aware it will melt on top of the pasta in the oven so if you like your pasta cheesy then please, sprinkle away!

Put your pasta in the oven and leave for twenty to twenty five minutes.

Now here comes the fun part! Whilst your pasta bake is in oven take the bag of nachos or Dorito’s and crush it in your hands (just be aware you may pop the bag!) You want to crush it so much that it can be easily sprinkled on top of the bake.

Once the twenty or twenty five minutes are up, take your bake out of the oven and sprinkle your crushed nacho’s or dorito’s on top. Then place your bake back in the oven for another ten minutes.

And there you go! Mexican Pasta Bake that uni me would be proud of! 

Me and the boyfriend usually have some with a little sweet chilli sauce but that’s only because we’re weirdo’s and have sweet chilli sauce with everything!
