What could possibly make your Saturday any better than a Dairy free Chocolate Cake? Okay okay! So I know what you guys are thinking, Dairy free and Delicious?! Seriously?! But I swear this cake is just as tasty as the real deal without the messy dairy products.
Its a perfect sweet treat for anyone trying to watch their dairy intake or it’s just as suitable for someone wishing to make a cake with a twist, either way, I urge you to try it! I found this recipe on the website tiphero.com but altered it a teeny bit for my own personal preference. If you’d like the original recipe I’ll leave a link to it below.
The cake takes in total about 45 minutes to make with only 10 of those minutes being preparation time! I know crazy! You also only need one round baking tin so there’d hardly any washing up.
To make you’ll need:
- 1 to 1 1/2 cups of Plain Flour
- 3 Tablespoons of Cocoa Powder
- 1 cup of granulated sugar
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 teaspoon of white vinegar
- 1 teaspoon pure vanilla extract
- 5 tablespoons of vegetable oil
- 1 cup of water
- Bar of dark or diary free chocolate for melting (or your preference)
- Raspberries (for topping)
To begin preheat your oven to around 180 degrees celsius and grease a round baking tin (or square! your choice!)
Then add all your dry ingredients to your tin and mix em around a bit.
Next, you need to make 3 holes (or wells) in your tin of mixed dry ingredients, with two holes being small and one being a bit larger than the other two. Pour your vinegar in one of the small holes, and your vanilla extract in the other small hole. In the larger hole, pour your vegetable oil.
Now pour your cup of water over all, and mix with a fork until smooth.
Bake your cake mixture on the middle rack of your oven for about 35 minutes. To check it was cooked properly, I used my mums old trick of inserting a clean fork and seeing if it came out just as clean.
Whilst waiting for the cake to cool, melt some chocolate of your choice (I used dairy free). You can either melt your chocolate in the microwave or in a glass jar on the hob (stove). I personally choose to melt mine in the microwave just because I was feeling lazy and couldn’t be bothered with loads of washing up!
Cover the top of your cake in the melted chocolate, I also added a few raspberries on the top of mine but you don’t have to if you just want the chocolate (my boyfriend took the raspberries off his).
I also left mine in the fridge for about an hour so that the melted chocolate hardened a little, of course this is completely your choice!
And there you go! Dairy Free and Delicious Chocolate Cake!
